Flames & Flavor: Celebrating Cinco de Mayo with Fire Pit Grill Fajitas

Cinco de Mayo is the perfect excuse to gather with friends and family, fire up the grill and enjoy a fiesta.  We believe every celebration is better with good food and a roaring fire.  This Cinco de Mayo bring, both with a sizzling fire pit grill loaded with chicken fajitas.

Whether you are hosting a backyard fiesta or a casual gathering, our fire pit grill is the ultimate centerpiece.  It brings the heat and is an inviting space where friends and family can gather, sip margaritas and cook fajitas together.

Fire Pit Grill Chicken Fajitas – A Crowd Favorite

Ingredients:

2 lbs boneless Chicken Breasts, sliced into strips

3-4 Bell Peppers – Green, Red and Yellow, sliced lengthwise

1 large Red Onion, sliced

3 tbsps Olive Oil

Juice of 2 Limes

2 cloves Garlic, minced

1 tsp Cumin

1 tsp Chili Powder

Salt & Pepper to taste

Flour Tortillas

Tequila

Aluminum Foil

Charcoal and Logs

Toppings:  Shredded Mexican Cheese, Chopped Cilantro, Sour Cream, Salsa, Guacamole

Instructions:

Marinate the chicken with the olive oil, lime juice, garlic and spices overnight.  Add charcoal to your Fire Pit Grill and light.  The coals should be ready in 30-45 minutes.  Next add logs to the center of the grill.  Coat the grill ring with olive oil or high heat oil before adding the chicken.  Cook the chicken approximately 6 minutes per side or until fully cooked.  Toss the vegetables lightly with oil and add them to the grill ring.  Wrap the Flour Tortillas in aluminum foil and place on a cooler zone of the grill to heat through.  We like to sprinkle some tequila on the chicken to ignite the flame.  Add your favorite toppings and eat straight from the grill.

Set the scene with string lights, colorful flowers, plates and napkins certain to bring a festive atmosphere to the gathering.  Place buckets of ice with Mexican beer and pitchers of margaritas, along with bowls of limes, chips and salsa on a nearby table.  Encourage your guests to gather around the Fire Pit Grill and join in the fun of cooking fajitas.
