How to Make a Sea-Cuterie Tray for Coastal Fireside Nights

When summer calls for something more memorable than the average Charcuterie Board, elevate it a bit with a Sea-Cuterie Tray – a fresh, briny twist on on outdoor grazing that is perfect for summer nights by the fire pit.

We put this together on Cape Cod – an effortless spread to savor with friends and family around the fire.

You will need:

An aluminum baking tray with sides, large enough for plenty of ice

Crushed or small cubed ice

Small marble tray or wooden tray that fits over one side of the tray with ice

Crab Dip

Seaweed Salad

Smoked Bluefish Dip

Marinated Shrimp

Oysters on the half shell

Tinned Trout

Cocktail Sauce

Crackers

Rosemary Sprigs and Sliced Lemons

 

Start by building the base.  Fill your aluminum tray about ¾ full with ice.  This will keep everything cold and add a coastal feel.  Next, position the marble tray on one end of the aluminum tray.  This elevated surface will hold the crackers and tinned fish to keep them dry.

Arrange the seafood on the ice.  Begin by tucking the oysters in the ice and the cocktail nearby.  Then place the bowl of marinated shrimp next to the bed of oysters.  Add bowls of crab dip, smoked bluefish dip and the seaweed salad, nestling all in the ice so that they will stay cool.

Finish by placing the tinned fish and crackers on the marble tray.  Garnish with the lemons and rosemary sprigs.

Bring your tray fireside, pour drinks and channel that seaside mood.  Cheers to briny bites, cozy nights and summer memories by the fire.
